I'm considering going to a single two barrel carb on a my 66 chevy truck. It has a 230 from a 63 truck installed. I currently have a Offenhauser 2x1 intake with headers and 2 1bbl Rochesters. I am looking more for drivability.

I'm considering having the stock ehaust manifold split at Kansas Kustoms, placing the original intake back on and going with a reliable 2 barrel. Any thoughts or recomendations?

I don't think they'll split that manifold for you. Not good metal, cracks easy and hard to weld. I'd go for the cast iron headers from Langdon's.
I don't know what 2 bbl to recommend but, I can say I had bad experience with several variations of the Rochester 2G.
You should email about your exhaust manifold and be prepared for plan B.

The 2G is a mixed blessing. Holley makes a 2 bbl that should be pretty good. I had an 80 van with a 25 and progressive Rochester 2 bbl that worked pretty good. Got about 18 mpg with it.

Last I knew, Kansas Kustoms would not split headers from the later sixes due to crappy material.

For drivability the Holley / Weber 5200 is tough to beat. However, it is a pretty small carb. compared to running dual rochester singles you would loose some horsepower. But, you can't beat 'em for cold starting and just all around runnning good. Pretty good mpg too as long as you don't get to heavy footed.
