Is there anything that I should be aware of in the way of an engine? I don't want a v8. Is a 235 better/worse than a 250? What all sizes of engines origally came in these trucks? Thanks in advance for any comments/help.

I think that the 250 is a better motor. It has more power and is more reliable. I almost never had to lift the hood on my 250. My 235 is a different story.
