From what I understand, replacing the wood in a panel truck is no small task. The outer most boards go under the body and all the boards are held down in the rear by special flat topped bolts so they sit flush. I think they are called elevator bolts. No doubt yours are rusted solid and you will break one or two getting them out. The entire project is possible but a ton of work. Sand and stain or do what most do, lay carpet or fabric down to make it look clean. Show us a pic of what you are working with.

The web site for Jim Carter Truck parts in Independence, MO has a technical section that I believe give the dimensions of the wood in the floors of panel trucks. Same for Suburbans?
