I was wondering on a Chevy 1951 216 if the valves are stuck will the piston hit it and damage the valves

There should not be a problem with pistons striking valves in 216 or 235 engines. In stock configuration, these are non-interference engines.

A 235 can have interference problems between the connecting rod bolts and the camshaft core if the cam gets out of time, but they have a longer stroke than a 216. I don't believe a 216 will have any risk of contact anywhere, including the valves.
