There are no new carburetors being made for these trucks that perform as they should. They're Fitzall units made in China that are meant to give so/so performance on a wide variety of applications but in reality don't perform well in any application.
Check the accelerator pump. Look down the throat while goosing the throttle and see if you see healthy squirts of fuel.

* Is this a stumble/ bog before acceleration that eventually smooths our? Or just a general refusal to pick up RPM?
* Are valves adjusted properly?
* How did you set the timing?
* Is the engine warmed up to operating temp when it displays the behavior you describe?

Begin by loosening the pipe at the exhaust manifold flange and checking for acceleration- - - -then move back one coupling at a time until it bogs down again.
