Alt meter is a no. Fuel gauge is a yes. Some guys say they continue to use their 6v gauge on 12v but you will end up changing it after it burns up. Might as well do it while you are neck deep already (unless you want to use a voltage reducer. That is an option.) Don't forget the change light bulbs in your instrument cluster to 12v.
Getting to the fuel gauge wiring is not easy and neither is removing the gauge cluster to replace the fuel gauge. I recommend you consider the option Dave pointed out and that is to install a voltage reducer into the hot wire going to the fuel gauge . I don't see what year/ model truck you have but if it's original wiring , it would be a pink wire running from the ignition switch to the fuel gauge. Splice the voltage regulator into that wire and you should be good to go.

I have done quite a few 12 volt conversions and I always used a #194 bulb and pigtail in series on the power supply to the gauge. The bulb comes on dim and will last forever. Drops the voltage perfectly.

Brian, have you read the 12V conversion tip in the "Tip Section" on Stovebolt? The following comments are without knowing the year of truck and any mods/changes to electrical except you are going 12V with a new harness.
You only have one electrical gauge (gas). ..and one electrical meter (Ammeter). Oil and temp are mechanical. The gas gauge gets a simple voltage reducer inline and the ammeter may or may not be suitable. probably OK. can also be bypassed/replaced/shunted/abandoned in favor of a voltmeter or idiot light.
