I tried to do a series of searches but didn't seem to find anything that applied. I was sure that there had to be several discussions on whether to coat the head gasket with anything before install, but didn't see any.

So, I'm asking about all the possible coatings that would be appropriate for a rebuild on a 235 58-62. I have a Felpro head gasket set. I know many prefer the "Best" gaskets, but this is what I have now to work with.

I use Permatex 80697 Copper Spray-A-Gasket since years. Works fine so far - but actually, the gaskets without the copper spray didn't show any problems ether.
Not sure if it really makes a differece, maybe just peace of mind.

It depends on the type of gasket you are using. Its best to check with the manufacture. They often specify on the package when you should not use sealer. Felpro are good gaskets. They generally don't require or recommend any sealer. Copper coat in the spray & RTV are good products.

If you need some assistance keeping the gasket in place during assembly, then a little stickum is fine. Otherwise, not really necessary.

I have used copper coat spray (although early on it was a brush on) for a couple of decades with the Felpro copper head gaskets. Two years ago I replaced the head on my 261 and decided that even though I still had a couple of copper gaskets in my stash, I wanted to use a fresh gasket and ordered the Felpro blue composite gasket. I did use the copper spray a gasket primarily because I have never had any gasket failures so why mess with success.

Include (compressed) head gasket thickness in "factors that effect choice".
This affects piston to head, and intake valve to piston clearance. Most engine could use thinner gaskets to close up the quench distance.

I've been using Permatex Super 300 brush-on liquid sealer for over 60 years. It was developed to seal aviation gasoline, and I've never seen an application it didn't work well on. It's also more economical, and a LOT less messy than spray-on sealers. Super 300 is almost black, NOT the 3-D brown brush on liquid.
