I'm curious, when replacing inner cowls, what do you do with the windlace channel that is installed on the surface of the cowl? Is it better to cut it off and replace that portion of the channel, or to avoid it and do a cut out and weld of the cowl metal only?

I think it would be way more trouble to weld a joint near the channel. It's easy enough to plug weld new channel on by drilling holes in it for the plug welds to the inner cowl panels.
