What are your opinions on just putting a clear coat on a truck and enjoying the patina? And is there anything that I need to know if I were to do it?

I would skip the clear coat and enjoy the patina as is, at least if you park it indoors. It will never rust enough to cause appreciable damage in your lifetime if you don't drive it in the winter.

I can tell you from experience, rust will bubble and cause yellow spiderwebs under the clear especially if out in the sun much. It only works good if it has all paint and just fading and peeling. It might last a year and then start to look like crap if even that long then you will have to start from bare bottom.
