I used the rims from a mid 80's k2500. The tires are 7.50x16 and have a nice tall appearance. They are bias ply. If looks don't matter you could go to a radial. My choice would be BFGoodrich Commercial TA's with a traction tire in back. The size would be lt235/85x16. That would put you near 32" with a tall, narrow look.
