Start with the interior: instruments, wipers, seat, heater, etc. then go with door components, trim moulding, etc...you get the idea..
A you really don't need anything left intact to start engine. Simply connect battery directly to engine to start. Fuel can come direct from fuel can sitting on roof of cab (don't even need fuel pump).
Incidentally, I started the same as you and it took about two months before I had to have the truck in my garage. Good luck.
