I also stayed with 6 lugs. I had the back of my hubs turned so they run true. I used '79 K10 rotors and '79 C10 calipers. I also upgraded to a 1 inch bore master cylinder without power boost.
My wheels are original 17 inch and there are no clearance issues. The emergency brake works the same but I had to make a new mount for the handle since i changed motor and tranny.
Difficulty is dependent on your ability to make the parts that can't be bought.
