Why not drill and tap another hole in your head? Any one of the bump outs above the manifold runners on the head will get you into the water jacket.
Go to autozone.com and look for a SW501 or TFS-6. They are temp switches for an early Ford Escort. They have 3/8-18NPT threads and only a one wire hook up. It's really simple to install, you just hook the ground side of your fan relay to the temp switch.
