I bet you got that good deal for the manifold and YF 2100S that was advertised on Craigs List recently. I tried to jump on it, but being on the opposite coast made it difficult.
I was slightly puzzled by the gaskets. I had two kits for the Carter YF 2100S, and they both had the same gasket. The gasket would cover the notches in the heat riser block, and would cover one of the ports on the bottom of the carb. If you didn't use a gasket, then this port would align with the notch on the heat riser block and the other port would be blocked. I decided this must be intentional, and installed it with the gasket, and all is fine.
