Motor cycle and bicycle tires are large and narrow and limber, it works out. Truck tires are big, stiff, and tough, you need all the help you can get.
Not only would it be really difficult to change a 20 or 22.5" truck tire without a drop center (or multi piece rim) I'm pretty sure it'd be impossible.
