SPDT switch and DPDT switch, these are found all over. Radio Shack is a good start. Ebay, by the hundreds. Auto Zone carries some varieties of these. Electronic surplus parts warehouses, used stuff, by the thousands. Cheap and easy to find.
You only need one switch, which depends on if you go with a mechanical fuel valve or an electric fuel valve.
SPDT - mechanical fuel valve
DPDT - electric fuel valve
Get you a nice looking dash mount switch, some lengths of wire, pinch terminals, good to go.
