I'm a pretty methodical person, very organized so I'm pretty confident that I'll have that part down and I'm already photographing everything.
I like your idea of breaking it down into projects that can be done while I'm still driving it. So far I've got everything out of the interior other than the seat and gauge cluster. Once I get a better look at the floor I'll decide how far I need to dive into the cab.
Regardless, The bed will be the first thing to be removed... Get the sheetmetal worked out, hang a spare tire carrier and clean up that part of the frame.
