Ok - let me try again - what I meant is: What happens if you turn the "shinny" side in, against the head?
On V8s (ok, "twin-4s") I've used 2 sets of FelPro exhaust manifold gaskets many times. I put them back to back so that there's a shiny side facing the header and one facing the head. Works fine. I don't see why you couldn't do that with your I6 gasket. Matter of fact, that's what I'd reccomend doing...using 2 gaskets back-to-back.
