I fit my stock AD seat with it all the way back but when I used to have a '55 CJ-5 I couldn't get my knees under the steering wheel. I got some seats from Steel Horse and made new mounting brackets.
Either offroad or racing seats tend to have thin backs and upright seating positions and should work for you.
Good luck, though, the '41 cab is pretty small.
