I think that you should go with some working truck tires. Either a good set of pavement pounders or my personal favorite a knobby set of farm/mud tires. I really like the look of the old school style off road tires, espescially on your year of truck. Personally I would add some attitude with the mud tires and leave the white walls to the show trucks. Either way though, do what you want, my opinion is exactly that, mine. The beauty of free thought and action is doing what you want to.
