Here is my $0.02
1. Don't bother rebuilding the calipiers. Either use them as is (they may be fine) or use them as cores at the parts house and get some rebuilts. Do you have a power booster, master cylinder and proportioning valve to go with the disk brakes? If not you are not ready to do this.
2. Save the power steering for another day. It is a convenience and not a requirement for Dallas area driving. Plus the exercise will do you good.
3. The tank relocation is also not a requirement for general driving. If your stock tank is in place (?) and not leaking, leave it where it is. The details of moving a tank are numerous such as fuel line routing, tank mounting, sending unit wiring/grounding, etc.
Do the brakes and leave the rest for another day. The brakes can be done in a day in the parking lot with the right tools many of which you can rent from the parts house (Autozone or Oreilly's). If you have a friend with a driveway and jackstands you are good to go.
