Totally makes sense The prop being higher is ok. Put it where you can reach it without having to get down up and under.
But your totally correct on why the donor combo does not work well. it is sized for that suburban and not the light rear end of a unloaded pickup.
The adjustable one should solve rear end lockups as long as you adjust it correctly. Follow the steps Joe H gave you above.
