1) Have you tested that mechanical gauge against another one, on the same sample? Or perhaps just test it against a thermometer of some sort. My first inclination is bogus result from a bogus gauge.

2) That coolant port near the back of the head is very near to the exhaust manifold. Perhaps it is picking up some radiant heat from that area. It shouldn’t behave that way. Still evidence of a bogus gauge, just a slight twist on the failure mode of bogus-ness.

230 degree coolant on a low pressure system should be been boiling like nobody’s business. My bet is that your system is working as it should.
