The weight of the engine will hold it down, so the dolly shown above would work. Resting on the oil pan rail is a good way to hold several different types of engines, wrap a strap around the whole thing if it makes you feel better. For cooling, make an adaptor that goes from radiator hose to garden hose, meter the water into the engine with a ball valve, and adjust the flow to keep the engine warm but not hot. Use second hose adaptor to run the warm water out away from the work area.
Use the biggest and heaviest wheels you can find, it makes rolling them around much easier.

I rebuilt my V8 run stand this summer, I watched Facebook and ebay for cheap priced gauges, and scrounged all the metal from scrap piles. Fans are used A/C condenser fans off school bus we were getting rid of at work.
