I’ll chime in because I drive a 1963 C10 with a stock 230ci several times a week. No complaints about performance from me. I’ve driven it with the factory 3 on the tree and now with a 5 speed tranny. Plenty of power for a C10.

I had a 250 in my 1965 C10 and loved that engine too. It’s a coin toss.

Here’s a graph of what to expect from a 1965 230ci. Your 1975 250ci might perform better or worse depending on condition.

I think most folks feel comfortable getting the RPMs up to 3000 on the highway. The engine will do fine at higher RPMs but it gets noisy. More noisy than most folks feel comfortable with these days. Jerry will tell you the engine can take the higher RPMs but from personal experience, I prefer to keep the RPMs just under 3000 on the highway.
