I've had a good deal of trouble in the past with the original Rochester 1BV off my '66. They use a piston-type accelerator pump. Over time, the pump chamber gets worn and the piston will no longer seal, even if it's replaced with a new one. That could explain your stumble right from the get-go.
Might I reccomend a pair of Weber ACHs? Excellent design with ball-bearing throttle shafts, and every jet is easily accessable, making for a very tunable carburetor.
If a 'truck' is only used to haul butts to the mall, then it's not a truck - it's a car with a roadster trunk.
