#1 is called a "drain petcock" It's got a left hand thread on the T shaped piece so it screws in and opens up a drain passage when the T is turned counterclockwise.

#2- - - -this can be either a simple screw fitting shutoff valve with a T shaped handle, or one controlled by a cable from inside the dash. The original-equipment cable valve is called a "Ranco" valve, and the best you can get is a good used one. New ones are unobtanium. Several simple aftermarket cable controlled flow restrictor valves are available at local parts stores or on ebay. Search "heater control valve".
