where are you applying grease on the spindle? The bearings should slide over the spindle and are a tight enough fit that if you put a bunch of grease on the spindle, the bearing will push it up against the backing plate and make a mess. I normally just grease the bearings and races real well, a little grease on the seal, and wipe the spindle with a rag to get any dirt or brake dust off. It is fine to have a little bit of grease on it (like a film left from the rag) but not much.
