I want to change over to an electric fan I don't like the blade, they have always seemed dangerous too me. And I have been reading that the electric fans cools your engine better. 1966 C10 short bed stock 283

My question is the thermostats that you buy to regulate the fan coming on and going off have different temperature ranges depending on which one you buy. The one that I am thinking of getting comes on at 180 degrees, it goes off at 170. Now if the thermostat in the block is 195 isn't your engine going to run at 195 and the fan will just stay on because the temp will never go down to 170. Do I need to get a different thermostat for the engine block? I have a 1966 283 stock engine shouldn't it run at 195 degrees.
