Late reply. Not sure I have enough info to help. You said the tire (not the rim) is rubbing. If it was me, I'd measure the offset of the wheels that rub that are on the truck now. Depending on how much rub and how quickly they rub, I'd go with 1/2" or 1" less offset for the same size rim (I assume they are 15"). If you go with a larger rim like 16" then the problem might completely go away with the same offset you have now.

This may sound goofy, but here's an idea. Cut a disc of plywood with a 15" diameter. Mock up a ring of paper around the edge to simulate the rim interior. Bolt it on and see what will clear.
