The 235 happens to be set up for 12 volt (coil, solenoid switch starter, and alternator).
1. With old wiring, is it safe to go 12 volt? What kind of relays, etc may be needed.
2. I kind of want to use my old foot stomp starter setup. I presume I would need to use my old 6 volt starter for that, which needs a new switch anyway. If so, should I get a 6 volt or 12 volt switch ?

I think you are saying you want to upgrade the vehicle to 12 volt. If that's the case you will need a new voltage regulator, blower motor for the heater, horn relay, fuel sending unit, light switch ( for the dimmer part) and new bulbs including headlights ( please note that for some components you can wire a resistor in line that will drop the voltage to six volts approx. so you don't have to replace components.). The stomp switch is just a huge switch with big copper components, no need to change that out.
I probably swim against the tide on this one but I would rather have the original 6 volt system. It worked just fine for a lot of years.

the foot starter switch doesn't care about voltage, but to use your foot starter you need to have the correct [6V] flywheel tooth count, 139 teeth .... it may be that the solenoid starter was from a 6V car, so the flywheel might be from a 6V, but if you have the 168 tooth 12V flywheel, you could find a 12V foot starter, 55.2-60
