I've been scouring the forums looking for an alternative to recovering my old original bench seat and came across a stovebolter (Julio:

I stopped by my local Pick-N-Pull a couple of weeks ago and found the exact same seat on a 2000 Durango with no exterior damage and a great interior. Here's the seat mocked up in my truck:

My father will be welding up some brackets to mount the seat which sits in the original seat position as well as brackets to mount the 3 point retractable seat belts. The seat leaves enough room on both ends to mount seat belts, plus because they fold forwards, I now have full access to the space behind and below the seat.
