Anyone with tips on how to do this correctly? None of the gauges are working right now, I believe this is due to the original motor being swapped out to a 350 and wiring being changed. Maybe I am wrong, but hope not.

The engine size would not matter as long as the senders are installed in it. The wire from the sender goes to the correct terminal on the gauge & the wire that comes on with the ignition switch goes to the pos. side of the gauge. On the voltmeter the hot wire from the switdh goes to the pos. & the neg. is grounded. They say money can't buy happiness. It can buy old Chevy trucks though. You may need an adapter for it to fit. On the temp sender it usually goes in the outlet between #1&3 spark plugs. A reducer should come with the kit or is available at a hardware or parts store.
