I am changing the original gauges in my 38 GMC to the Datsun 280Z gauges. The new gauges have plugs on the end of the clump of wires, what I would like is to find the mating ends or replace the plugs completely (male and female ends). So where can I get OEM type plugs ??

I would check with a Nissen dealer to see if the plugs and crimp terminals are available. Next find a Datsun forum. If those fails the OEM crimp terminals are available for the 60s Chev trucks.

The electronics store by me (circuit boards and parts, not stereos and games) carries all kinds of multi-wire mating plugs. The come with the pins ready to solder onto the wires and insert into the plugs. I've used them all over as I rebuild the harness. They even have the modern weatherproof ones you'd see on modern vehicles. Used those when I did the headlights and other stuff in the engine bay.
