Asking for what is the best will always get you a ton of opinions...
I have a 57 3100 with the 235 in it and I have the fenton dual exhauxt and the factory intake with a single rochester on it.
She starts like a dream, runs great, gets decent mpg and has never left me sitting on the roadside. Don't knwo if that qualifies for "BEST", but tha tis my experience. It is in my plans to upgrade to the dual carbs in the upcoming months, so I will get to see how hard it will be to keep the two rochs in sync.

Recently however it has taken up the nasty habit of filling up as if the float was stuck/sunk and dripping gas on the exhaust. It would work for a while, then not, work for a while then not. I can find nothing wrong except for pouring gas all over the exhaust. As I had a whole box of various carburetors, I rebuilt one and replaced it. My opinion would be what ever you can get 2 of would be good. Just make sure if you get rochesters that they have all the goodies to hold on the air filter, once again not knowing then what I know now, I bought two with the stud brackets having been torn out.
