Part of the angle relies on the angle that the output of the trans is at. The idea is hat you want the operating angls of the 2 U-joints to be the same. This is to prevent vibration and to extend the life of the U-jounts. there's only so much angle that they can operate at, usually 11 degrees max, so the setting of both the pinion and trans agles is crucial and they are dependant on each other.

Can't say I'm talking from experience though, we haven't got that far on our truck yet.

The pinion is set from 2 to 4 degrees down from the centerline of the crankshaft/output shaft centerline. CenTex is correct in stating the angle is best set when the normal weight is on the truck. Two things occur when the angle is correct, when accelerating the pinion rises and pushes the front yoke deeper onto the splines until zero degrees is reached then starts to draw it back out as it goes above zero degrees and, anything off of zero degrees rotates the U-joint in the bearing cups thus preventing flat spots on the needle bearings.
