In the 90's steering wheels started including an air bag and I don't think you want to adapt one of those.
Another approach might be to swap wheel and column together.

The spine on the earlier wheel is buried back further in the center of the wheel. So that might be a problem. Have you converted this truck to power steering, without it the smaller wheel is gonna be a PITA.

Mongo PITA is an understatement. You better starting working out if you decide to go that way.
