My 1953 pickup heats up Really
Fast. 180 F. quickly.
Seems too hot. Doesn't boil over.
New radiator core, water pumps seems fine,
Manifold haet control valve good. No leaks
Am I missing something ?

In your case it sounds like 180*. If it doesn't blow over & doesn't go above 200* your fine!
