When the key is off, the fuel gauge reads empty.

When the key is on, the fuel gauge reads full, regardless of what level the fuel is at.

It would appear the gauge itself is good, and perhaps the problem lies with either a ground or the sending unit.

Is there an easy fix here? I hate anything electrical...

I'd disconnect from the sender and check the wire with a meter to see if it's developed a short to ground between the gauge and sender - if it's OK, then it should be the sender, pull it and check it, the variable resistor on it may be rotten

To check the guage: disconnect the sender wire at the tank and ground it. Turn the key on, the guage should read empty (if it does, your guage and wiring are good and the problem is either a bad or stuck sender or a bad sender ground). If it still reads full, (sender wire grounded), the sender wire is open or has a bad connection at the guage, guage not grounded to housing, or the guage is bad.
