Tom is correct. The convex surface is waht causes the lifter to rotate as the engine runs, which actually helps decrease the overall wear. This goes for solid lifters, too. Do you have a true surface to check them on, like a flat plate of glass? If they are truly flat, then the whoever "refurbished" them did not do the job correctly.
