Is there an easy way to distinguish between a 305 and a 350 V8, just by looking at it or do I have to start looking for numbers?

Best way is to check the numbers. You might to be able to tell by eyeballing the heads and exhaust manifolds, but these can be interchanged. Go to Mortec.com for casting number info.
