What's the best product or method for removing the muddy grease on items like the oil pan, frame, and rear axle? I have tried Gunk engine brite degreaser, but it doesn't work that well. Is there something that can be sprayed on and then powerwashed off? I have tried oven cleaner on other things in the past. It removes grease and paint, but tends to rust badly if nothing is done immediately after washing it off.

Anything that removes grease is going to cause rust after it comes off, because the grease is whats keeping the metal from rusting.

You can always fog the bare metal with WD-40 after you clean it, in fact WD-40 also tends to remove grease without harming paint.

I like Gunk or Simple Green. If you hook your hose up to hot water it works a bit better.

I use gasoline and a parts cleaning brush. Then blast it with the hose.

Brake cleaner works.Expensive but works well

I usually use a couple cans of spray degreaser, then simple green... take it to a spray and wash place, if you can find one that allows that sort of stuff.

Get you a 55 gal barrel, fill it (40 gal) with hot water and add about 200 oz. of lye. Heat the barrel with a wood fire or propane heater under it. Heating speeds up the lye's work. The lye solution works equally well removing paint. The large barrel will allow you to strip a lot of larger parts.

Marine Degreaser works better than the Engine Brite/Gunk spray can stuff. Based on what it does to your skin and what it does to grease, I'm betting it is a strong caustic solution like lye dissolved in water.
