will the head and intake off a 216 fit a 261

No, they are completely different. The 216 has a tall push rod cover that goes to the head and surrounds the spark plugs, the 261 does not have this. If you need a head for a 261, a head from a full pressure 235 (53 w/ powerglide and '54-'62) will work.
