The capillary tube is not long enough to get to the thermostat housing where I think it should hook up. It is about an inch short (straight shot from the firewall-doesn't look good).
There is a plug in the side of the block on the driver side that I believe is into the water jacket. Can I use that?? Any ideas on how to adapt??

You should have good results by goung into the water jacket on the engine. There is all kinds of fittings to hook it up. I don't know right off the size, by maybe someone else will know. Actually, you should get a better reading off the block, because the access on the thermostat housing is for other sensors that controls other devices I think. Someone correct me if I'm way off base.

Putting the temp sensor into the block might give a lower temp indication by a few degrees than the below-the thermostat location, but not much difference, IMHO. The coolant is the hottest right before it enters the upper radiator hose.

The 230 should have the same size sender hole as a 350 V8. | | |
