You're right. In answer to the sound question, yes, you can get a mellow sound with headers. It's all in the muffler. The Dynomax Turbo is quieter than the Flowmasters, and sounds good.
Now, as to what to do for a manifold, there are pros & cons to tube headers. They will increase your power, and they do sound better. But, they will rust and dissipate more heat into the engine compartment. The way around these problems is to buy the headers with ceramic coating inside and outside. Clifford shows +$100 for this, and it is worth it. Another problem is you will lose your intake manifold heat, and will need to run a water heat to the intake.
If you're not that concerned with performance, you need to look for a good used exhaust manifold, it will be a bunch cheaper. Try an ad in the swap meet. Another place to try is the
