The height of the clearance ramp will be very obvious- - - - -it's an area of gradual lift just as the lobe shape transitions from the base circle to the beginning of the lobe lift. Exhaust clearance ramps are usually higher than intakes, due to the heat expansion of the exhaust valve stem. Just about all the cam grinding companies publish detailed instructions on cam degreeing on their websites or paper catalogs. I learned how to degree cams by reading the 1954 edition of Ed Iskenderian's "Top Tuner'' Tips".
