My original wiring is intact and working, but is in bad shape. It would be a lot cheaper to do it yourself one wire at a time as you said. There can't be more than 8 or 9 circuits on that truck. In a bare bones response, yes there are lots of different replacement wiring harnesses/options pre-made for your '48.
Take a bit and consider what exactly you want as an end result, original reproduction, original style new modern materials with no changes, original style with some modern upgrades (like converting to 12v and an alternator), addition of turn signals, radio, etc.
Provide more definition to what your goal is and folks can offer better pointers towards sources that we know are reliable and as wallet friendly as they can be.

The splices I did were hidden beneath the vinyl wrap I used on the entire harness. While i was at it, I added wires to the front parking lights for turn signal circuits. It didn't take that long to repair the harness, but the vinyl wrapping was a two-person job. I posted some write-ups and pics in my Project Journal, starting with this post.
