HERE is the Tech tip for paint colors, unfortunately, the paint codes are out of date.
The interiors of 1949 truck were all the same color except for a few accent colors. Steering wheel and column were a slightly different shade, and on pre-1951 trucks, the speaker grille and glove box had a highlight color on them.
Jim Carter sells an interior color (their part number PT107E), but I found it slightly darker than the original color on my dash (on the speaker grille that was covered by the stainless trim.) I took it to a local paint store and they were able to lighten it to be a pretty close match for me. If you get their paint you probably wouldn't be able to tell unless you had an original part next to it. Jim Carter's steering column paint is a darn close match to original (their part number PT-108 - which seems to be unavailable now
)
Attached is a document from GM on interior colors, but again the Duco codes are probably not translatable to modern paints.
I was also able to track down paint chips from TCP Global. Also attached.
