I have the stock manifold, unhooked the exhaust to fix a leak fired it up for fun and it sounds awesome, will probably be sick of it once the exhaust gasket comes, but read some stuff about burning valves, and wondered if it was true. I know it'll have less torque, but just for fun.
Also, does anyone have opinions on exhaust cutouts? I'd like to put one as close to the manifold as I can for that sound once in a while. Do the flap ones just end up being leaky?

If you had no manifolds at all the Theary was that when you shut the engine off, the cold air would go in & warp the valves. No one has proved that there is any thing to this. Maybe back years ago it might have been true.

When you pull it up it diverts the exhaust flow to a train whistle. It's loud as hell and cool as $#!+!

Too many old stories and wives tails about that subject.
Lets remember the very short exhaust stacks on the old Allison and Merlin equipped aircraft of WW2 days.
A P38 shutting down one of the engines at 30,000 feet where is is very cold, didn't seem to have any problems.
So you are just fine running with no manifold at all, it may make a mess if it is installed in the truck though.
Kicking self for selling off my Taskforce trucks.
Still looking for an LCF or conventional big bolt in decent shape.
As of 10-26-2022, A 55.2 Taskforce long bed now the work begins
