What do you all use to cover the inside behind seat where gas tank is ?

The factory didn't cover the gas tank with anything. On the 5 window trucks, an upholstery cover was placed on the top back of the seat, but nothing on the gas tank.

Unless you replace the seat (like install bucket seats), the tank doesn’t show. It’s screwed in place with three screws on the top frame, so there is no access to that area.
